Sweet potato oatmeal crumble bread

Ingredients  

Base
  • 70 g Sweet potato Steamed
  • 85 g Oatmeal
  • 1 Banana
  • 1 Egg
  • 2 tsp Baking Powder
Crumble
  • 7 g Oatmeal
  • 7 g Almond flour
  • 1 tsp Oil
  • 1 tsp Sweetener
Topping
  • Black sesame A desired amount
  • 70 g Sweet potato Steamed

Method 

  1. Chop the steamed sweet potato into small pieces. If the skin is thin and soft, you can leave it on.
  2. In a large bowl, mash the banana until smooth. Add the oats, egg, and baking powder, then mix well. Stir in the chopped sweet potatoes.
  3. In a separate small bowl, mix the crumble ingredients together until they reach a sandy, pebbly consistency.
  4. Pour the batter into the baking tin. Top with the remaining sweet potato pieces, sesame seeds, and finally the crumble.
  5. Bake in a preheated oven at 180°C for about 25 minutes.

Notes

If the top starts to brown too quickly (looks like it might burn), cover it loosely with aluminum foil for the remaining baking time.
