Anpan is a classic japanese sweet bread.
I made it in a slightly different way in a muffin form!!

Ingredients
Method
- Mix the red beans with a bit of honey. Mash them slightly as you mix to create a rough paste.
- In a separate bowl, whisk together the egg, honey, baking powder, rice flour, and soy milk until smooth.
- Fill your muffin cups about halfway with the batter. Place a spoonful of the red bean filling in the center, then cover with the remaining batter.
- Sprinkle black sesame seeds on top for a classic Japanese touch.
- Bake in a preheated oven at 180°C for about 20 minutes.
