Azuki Beans Anpan Muffins

Muffins

Anpan is a classic japanese sweet bread.

I made it in a slightly different way in a muffin form!!

Ingredients  

  • 1 Egg
  • 100 g Rice Flour
  • 1 tsp Baking Powder
  • 40 ml Milk Soy Milk etc
  • 2 tbsp Sweetener Honey, agave etc
Azuki Paste
  • 60 g Azuki Use unsweetened canned beans or boiled red beans.
  • 2 tbsp Sweetener Honey, agave etc
Toppings
  • 1 tbsp Black sesame

Method 

  1. Mix the red beans with a bit of honey. Mash them slightly as you mix to create a rough paste.
  2. In a separate bowl, whisk together the egg, honey, baking powder, rice flour, and soy milk until smooth.
  3. Fill your muffin cups about halfway with the batter. Place a spoonful of the red bean filling in the center, then cover with the remaining batter.
  4. Sprinkle black sesame seeds on top for a classic Japanese touch.
  5. Bake in a preheated oven at 180°C for about 20 minutes.
