Oatmeal Miso Banana Muffins

These muffins feature a unique “sweet and salty” profile, using white miso for a mellow, savory kick and white sesame seeds for a nutty aroma.

Ingredients  

  • 120 g Banana
  • 84 g Oatmeal Flour
  • 1 Egg
  • 1 tsp White Miso (Regular miso is also fine, but white miso is recommended for its mild sweetness)
  • 1 tsp Baking Powder
  • 1 tbsp Sesame
Toppings
  • 6 Banana slices

Method 

  1. In a large bowl, mash the bananas until smooth and liquidy.
  2. Add the egg and white miso to the banana mash. Whisk thoroughly until the miso is completely dissolved and no clumps remain.
  3. Stir in the oatmeal, baking powder, and white sesame seeds. Mix until everything is well incorporated.
  4. Spoon the batter into a muffin tin. Bake in a preheated oven at 180°C (350°F) for about 30 minutes.
