Mikan Orange Citrus Chocolate Tofu Oatmeal Scones

Ingredients  

  • 70 g Tofu
  • 100 g Oatmeal
  • 40 g Mikan Orange Skin the mandarin segments as much as possible, then finely chop.
  • 30 g No Sugar chocolate
  • 1 tbsp Baking Powder
  • 1 tbsp Sweetener Honey, agave, maple etc
  • 1 tbsp Oil Coconut oil etc

Method 

  1. Skin the mandarin segments as much as possible, then finely chop.
  2. Gently fold in the chopped mandarin oranges and sugar-free chocolate.
  3. Let the mixture sit for at least 10 minutes. This allows the oats to absorb the moisture from the tofu, making the dough firmer and easier to handle.
  4. Lightly coat your hands with oil to prevent sticking. Use a "fold and stack" motion (folding the dough over itself) to bring it together into a cohesive mass.
  5. Shape the dough and cut it into your desired pieces (wedges or rectangles).
  6. Place the pieces on a baking tray and bake in a preheated oven at 180°C for 25 minutes.
