Sweet potato oatmeal crumble bread
Ingredients
Method
- Chop the steamed sweet potato into small pieces. If the skin is thin and soft, you can leave it on.
- In a large bowl, mash the banana until smooth. Add the oats, egg, and baking powder, then mix well. Stir in the chopped sweet potatoes.
- In a separate small bowl, mix the crumble ingredients together until they reach a sandy, pebbly consistency.
- Pour the batter into the baking tin. Top with the remaining sweet potato pieces, sesame seeds, and finally the crumble.
- Bake in a preheated oven at 180°C for about 25 minutes.
Notes
If the top starts to brown too quickly (looks like it might burn), cover it loosely with aluminum foil for the remaining baking time.
