Vegan Sweet Potato Oatmeal Ginger Cookies

The secret to these chewy cocoa bites is a hint of fresh ginger, which perfectly balances the natural sweetness of the sweet potato.

Ingredients  

  • 60 g Oatmeal
  • 100 g Sweet potato
  • 1 tbsp Cocoa Powder
  • 1 tbsp Sweetener
  • 1 tsp Grated ginger

Method 

  1. Chop the steamed sweet potato into small pieces without peeling it.
  2. Mash the potato pieces in a bowl. Add the oatmeal, cocoa powder, grated ginger, and your choice of sweetener. Mix everything thoroughly until well combined.
  3. Roll the mixture into bite-sized balls (about 5 pieces).
  4. Toaster Oven or Oven: Bake at 180–200°C for about 10 minutes.
