Tofu Oatmeal Pumpkin Muffins

These’re super moist but fluffy cute mini muffins.

Ingredients  

  • 150 g Tofu
  • 50 g Oatmeal
  • 1 tsp Baking Powder
  • 100 g Pumpkin Steamed and chopped
  • 2 tbsp Sweetener Honey, agave etc
  • 1 tsp Chinamon
Option
  • 1 tsp Vanila Essence

Method 

  1. In a mixing bowl, mash the tofu until smooth. Add the oats, baking powder, cinnamon, sweetener, and vanilla essence. Mix everything together thoroughly.
  2. Take about half of the chopped pumpkin and fold it into the batter.
  3. Spoon the mixture into a muffin tray.
  4. Place the remaining pumpkin pieces on top of each muffin for decoration.
  5. Bake in a preheated oven at 180°C for about 25 minutes.
