Method
- In a mixing bowl, mash the tofu until smooth. Add the oats, baking powder, cinnamon, sweetener, and vanilla essence. Mix everything together thoroughly.
- Take about half of the chopped pumpkin and fold it into the batter.
- Spoon the mixture into a muffin tray.
- Place the remaining pumpkin pieces on top of each muffin for decoration.
- Bake in a preheated oven at 180°C for about 25 minutes.
