Method
- In a bowl, mash the tofu until it is smooth and creamy (you can use a whisk or a fork).
- Add the egg and sweetener to the tofu. Whisk well until combined.
- Gently fold in the chopped prunes.
- Pour the batter into muffin liners. Place a few pieces of prune on top for decoration.
- Bake in a preheated oven at 180°C (350°F) for about 25 minutes.(Check with a toothpick to see if it’s done!)
