Earl Grey Prune Tofu Muffins

Ingredients
  

  • 70 g Rice Flour
  • tsp Baking Powder
  • 1 tsp Black tea leaves (Finely ground/Earl Grey is recommended)
  • 1 Egg
  • 1 tbsp Sweetener
  • 50 g Prunes 4–5 pieces (chopped)

Method
 

  1. In a bowl, mash the tofu until it is smooth and creamy (you can use a whisk or a fork).
  2. Add the egg and sweetener to the tofu. Whisk well until combined.
  3. Gently fold in the chopped prunes.
  4. Pour the batter into muffin liners. Place a few pieces of prune on top for decoration.
  5. Bake in a preheated oven at 180°C (350°F) for about 25 minutes.(Check with a toothpick to see if it’s done!)
