Method
- In a large bowl, mash the bananas until smooth. Whisk in the egg, then stir in the matcha powder, oats, and baking powder. Mix thoroughly until the color is a consistent green.
- Fold in the chopped apple pieces (keep the skin on for extra color and fiber!).
- Pour the batter into a greased baking tin or muffin liners.
- Sprinkle the top with slivered almonds for a nice crunch.
- Bake in a preheated oven at 180°C for approximately 25 minutes until a toothpick inserted in the center comes out clean.
