Pumpkin Dried Fruit Oatmeal Bread

Ingredients
  

  • 150 g Pumpkin Pumpkin purée or steamed pumpkin, peeled and mashed
  • 85 g Oatmeal
  • 1 Egg
  • 1 tsp Baking Powder
  • ½ cup Nuts and dried fruits Almonds, walnuts, raisins, figs etc

Method
 

  1. In a bowl, combine the mashed pumpkin, egg, and your preferred sweetener. Stir in the oats and mix well.
  2. Fold in your choice of nuts and dried fruits (such as walnuts, pecans, raisins, or cranberries).
  3. Pour the mixture into a lined baking tray and spread it evenly. Bake in a preheated oven at 180°C for about 30 minutes.
