Method
- Mash the peeled, steamed sweet potato in a bowl until smooth.
- Add the oat flour, egg, baking powder, cocoa powder, milk, and your liquid sweetener. Mix well until the batter is consistent.
- Stir in most of the chopped dates, saving a handful to garnish the tops.
- Let the batter sit for a few minutes to allow the oats to hydrate. Meanwhile, grease your muffin tin or line it with paper cups.
- Pour the batter into the muffin tin and sprinkle the remaining chopped dates on top.
- Bake in a preheated oven at 180°C for about 25 minutes.
If the tops look like they are browning too quickly, loosely cover the tin with aluminum foil halfway through.
