Tofu Azuki Oatmeal Muffins

Ingredients
  

  • 50 g Oatmeal
  • 120 g Tofu
  • 70 g Azuki Beans Use store-bought unsweetened steamed beans or homemade boiled beans (without sugar).
  • 1 tbsp Sweetener
  • 1 tsp Baking Powder

Method
 

  1. In a mixing bowl, mash the tofu until smooth.
  2. Add the red beans, oats, baking powder, and your preferred sweetener. Mix well until everything is thoroughly combined.
  3. Spoon the batter into a muffin tray (or muffin cups).
  4. Bake in a preheated oven at 180°C for 30 minutes.
