Method
- In a bowl, mash the tofu until smooth. Add the oats, baking powder, lemon zest, lemon juice, and your preferred sweetener. Mix well until all ingredients are thoroughly combined.
- Fold the raisins into the batter and stir gently.
- Pour the mixture into a lined baking tin.
- If you like, place thin lemon slices on top for decoration and extra flavor.
- Bake in a preheated oven at 180°C for about 25 minutes.
