- Mash the tofu in a large bowl until smooth.
- Add the oatmeal, baking powder, jasmine tea leaves, and sweetener. Mix thoroughly until a dough starts to form.
- Fold in the chopped dried apricots.
- Lightly oil your hands to prevent sticking. Gently "fold" the dough over itself to bring it together into a disc or rectangles.
- Preheat your oven to 180°C and bake for approximately 25 minutes until the edges are golden brown.
