Vegan Jasmine Apricot Tofu Oatmeal Scones

Ingredients
  

  • 100 g Oatmeal Flour
  • 80 g Tofu
  • 1 tsp Baking Powder
  • 1 Jasmine Tea Leaves (1 tea bag )
  • 1 tbsp Sweetener
  • 30 g Dried Apricots (chopped)
  • 5 g Oil

Method
 

  1. Mash the tofu in a large bowl until smooth.
  2. Add the oatmeal, baking powder, jasmine tea leaves, and sweetener. Mix thoroughly until a dough starts to form.
  3. Fold in the chopped dried apricots.
  4. Lightly oil your hands to prevent sticking. Gently "fold" the dough over itself to bring it together into a disc or rectangles.
  5. Preheat your oven to 180°C and bake for approximately 25 minutes until the edges are golden brown.
